Sassy Summer Sides & Desserts with Essential Oils

As the heat fires up outside, it’s time to stock your fridge and pantry with healthy, refreshing pick-me-ups after time spent in the sun leaves you feeling depleted.  Since fruits and veggies are now on sale and available fresh at our local farmer’s markets and stores, now is the time to get out those sassy recipes you’ve been saving all year.  These recipes are sure to be new tastes for your palate that please all ages, whether you’re taking a break indoors or partying picnic style out in the elements!  Don’t fall into the easy summer trap of pre-packaged foods and snacks when you can whip up these morsels to supplement your healthy lifestyle and leave you feeling energized!

LEMON-PARMESAN KALE CRISPS

Looking for a mouth-watering and healthy substitute for potato chips?  These Kale Crisps are super-easy on the budget and are a cinch to make.  Plus, who doesn’t love a crunchy, savory snack packed with antioxidants and amazing flavor?  Kale is packed with iron but can be slightly bitter, so adding citrus provides a zingy lift to the flavor and aids the body in iron absorption. They are also a great way to get picky husbands and kiddos to eat their greens

Ingredients:

1 large bunch organic Kale, washed and torn into bite-sized pieces
2 Tbsp. pure Extra-Virgin Olive Oil (EVOO)
2 drops Lemon essential oil
Garlic Salt
Parmesan Cheese
Pepper
Pinch of Cayenne Red Pepper (optional)

Directions:  

Preheat oven to 200° F.  Wash kale in water with 1 Tbsp. apple cider vinegar, shake, and dry thoroughly by gently dabbing with a towel.  Mix EVOO and Lemon essential oil in large glass mixing bowl.  Place kale in bowl and toss in oils, making sure it is well-coated (You may have to rub it in with your fingers!).  Place on baking sheet in single layer and sprinkle with parmesan cheese, garlic salt, pepper, and a pinch of cayenne red pepper if you’d like to spice it up!  Bake on the center rack for 45-50 minutes or until crispy, being careful not to let it burn!

SWEET & SPICY FRUIT SALSA

I absolutely love the taste of a sweet fruit salsa contrasted with a spicy punch.  Showcase the tastes of summer with this sumptuous, fruity summer salsa!  Lime essential oil adds a kick of flavor that also supports healthy immune function, while red onions provide antioxidants and disease-fighting components!  Fresh Cilantro, also found in this recipe, helps detox the body of heavy metals.  Your taste buds and your body will be thanking you for this tasty salsa!  Just be sure to dice the fruits into equal-sized pieces!

Ingredients:

1 ripe Pineapple, sliced and diced into tiny pieces
2 small, ripe Nectarines, diced
2 small, ripe Peaches, diced
½ c. fresh organic Cilantro, chopped
½ c. fresh organic Red Onion, chopped
1 fresh organic jalapeño (seeds removed, finely chopped)
5 drops Lime essential oil
2 drops Cilantro essential oil
Sea Salt

Directions:  

Combine all ingredients together into glass mixing bowl.  Tightly cover and let chill in the fridge for at least 4 hours prior to eating.  Dig in with your fav tortilla chips or go for some cinnamon chips for something different.  Feel free to substitute other fruits in the mix or add more or less of something to your taste!  And this tastes AMAZING with some fresh fish tacos!

CRAN-APPLE LIME SPRITZER (SANS ALCOHOL!)

Skip the preservative-laden sugary sodas and instead delight your friends and family with this sweet and uplifting spritzer.  This makes for a wonderfully healthy and memorable treat the kiddos will love!  The Lime essential oil added to this recipe gives that perfect zing, provides antioxidant support, and will uplift your spirits on the hottest of days.

Ingredients:

Organic 100% Cranberry Juice
Organic 100% Apple Juice
Sparkling Water
Crushed Ice
Lime essential oil
Fresh Raspberries for garnishing (optional)

Directions:

Fill glass jars or glasses (as many as you’d like) with ice and then fill each halfway with sparkling water.  Next, add equal amounts of apple and cranberry juice.  Add one drop of Lime essential oil to each and mix.  Toss in a few fresh raspberries and enjoy!  If you are traveling to a picnic, prepare in mason jars and seal for travel.  Don’t forget to pack straws for the kiddos!

CILANTRO-SPINACH SUNFLOWER PESTO DIP

Yowza!  Looking for a new and delicious alternative to mayo and mustard for your sandwiches or pita-pockets?  You’ve gotta give this one a whirl!  Try using this dip with pita chips, raw veggies, or with your homemade fries or sweet potato fries.  Packed with vitamins and minerals thanks to the spinach, it is sure to be a crowd pleaser if they can get past the green!  Plus, Cilantro essential oil has amazing internal benefits including supporting healthy digestion and cleansing the body naturally.  Guaranteed to be your new favorite go to for sammies or dips!

For the Cilantro-Spinach Sunflower Pesto:

Ingredients:

2½ c. fresh organic Spinach leaves, washed & dried
⅓ c. fresh organic Cilantro leaves
⅓ c. unsalted Sunflower seeds
1 clove Garlic
¾ cup pure Extra-Virgin Olive Oil
¼ tsp. Salt
⅛ tsp. Black Pepper

Directions:  

Add all ingredients into a food processor or blender and blend until creamy (don’t forget to scrape the sides if you need to).  Set pesto aside in a small bowl.

For the Dip:

Ingredients:

1 cup plain Greek Yogurt
7 Tbsp. prepared Spinach-Cilantro Sunflower Pesto (from above)
1 drop Cilantro essential oil
1 drop Lemon essential
Salt and pepper, to taste (if desired)

Directions:

In a medium glass bowl, add yogurt, prepared cilantro-spinach sunflower pesto, and essential oils.  Mix well and season to taste with salt and pepper.  If you want more zing, add another drop of Lemon EO to the mix!

TANGY HONEY-COCONUT POPSICLES

These yummy popsicles are the perfect way to beat the summer heat!  You will love the rich coconutty-creamy flavors and the kiddos will love this colorful, citrusy treat!  Plus, the added benefits of the Lemon and Lime essential oils will perk you right up while supporting healthy digestion.

Ingredients:

1 can full-fat Coconut Milk
1 c. Orange Juice, no pulp & no sugar added
1/3 c. local organic raw Honey (if crystallized, run jar under hot water)
1 drop Lime essential oil
1 drop Lemon essential

Directions:  

In a blender, add coconut milk, honey, and essential oils.  Pour mixture into silicone popsicle mold, dividing evenly – they will not be full!  Place in freezer for 10 minutes, then remove and pour orange juice to fill each popsicle.  Freeze again for 30 minutes, then insert Popsicle sticks.  Continue freezing until fully hardened, then pop out and enjoy!  Hint:  Run under warm water if you can’t get them out of the molds!
