Warm Quinoa w/ Berries

Eating a meal within an hour of waking ensures that your body has the fuel it needs to get going and carry you throughout the day. If you like a warm bowl of cereal topped with fresh berries and other goodies to start your day, say hello to quinoa! This recipe is easy to make and provides a warm, hearty dish to start the day off right.

Warm Quinoa with Berries

Serves 2

1 cup uncooked quinoa
1 cup unsweetened coconut milk
1 cup water
½ cup blackberries
2 tablespoons toasted chopped pecans
2 teaspoons raw honey, optional

Rinse the quinoa (if not pre-rinsed). in a small covered pot, bring the quinoa, coconut milk and water to a boil on high heat. Reduce the heat to low and simmer for 10 to 15 minutes or until the liquid has been absorbed. Cooked quinoa should be slightly al dente; it is ready when most of the grains have uncoiled and you can see the unwound germ. Let the quinoa sit in the covered pot for about 5 minutes. Fluff gently with a fork and scoop into two bowls, and top with blackberries, pecans, and honey (if using).
